Siggi’s Gluten-Free Zucchini Spice Bread | makes 1 loaf

Ingredients
- 2 cups gluten-free-all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. allspice
- 1/2 cup coconut palm sugar
- 2 large eggs
- 1/2 cup sunflower oil
- ½ cup siggi’s Orange & Ginger yogurt
- 1 tsp. vanilla extract
- 1 cup finely grated zucchini
Preparation
Preheat the oven to 325F. Butter and flour a 9*5 inch metal loaf pan.
In a large bowl, wish flour, baking powder, baking soda, salt, cinnamon, and allspice.
In a separate bowl, mix together sugar, eggs, oil, siggi’s Orange & Ginger yogurt, and vanilla extract.
Add the wet ingredients to the dry ingredients and sit unit just incorporated. Fold in the grated zucchini then for the batter into the prepared loaf pan.
Bake for about 40 minutes or until a toothpick or cake tester comes out clean when inserted in the center of the bread.
Cool on a wire rack for about 30 minutes before serving and enjoy!
