Fruits and veggies throughout the day

When I sit down to eat with people after they’ve discovered I’m a Registered Dietitian, I usually get the remark, “Don’t look at what I’m eating.” Although many think we judge, we’re at the table just like everyone else and working on our moderation. This week we’re taking a glimpse of what a day of food looks like for the RDs at iLiveWell. Here are our 24 hour recalls:

Adrien

Breakfast: peanut butter and jelly sandwich with coffee
Snack: cherries
Lunch: chicken pasta with extra veggies
Snack: popcorn
Dinner: tuna nachos with jalapeños

Kailyn

Breakfast: 2 pieces of whole grain seeded toast with peanut butter and banana
Lunch: kale salad with quinoa, feta cheese, blackened/spiced chicken, beets, dried cranberries, sunflower seeds and pumpkin seeds with a lemon vinaigrette (made on whole foods salad bar)
Snack: blueberries + 2 Trader Joes peanut butter cups
Dinner: beef stir fry with jasmine rice, red bell pepper, red onion, and bok choy with garlic and ginger soy sauce
Snack: 2 mini ice cream sandwiches (Mad minis from Whole Foods)

Alyssa

Breakfast: granola bar, banana
Lunch: two pulled pork tacos from Pacos Tacos
Snack: bar
Dinner: seared tuna, green beans, roll
Evening snack: Rice Krispie treat

Kathy

Breakfast: smoothie made with peach, banana and blueberries, plain Greek yogurt and milk
Snack: Nature’s Valley granola bar with protein
Lunch: tofu veggie stir fry with brown rice
Snack: hummus and veggie sticks
Dinner: ground beef and bean baked tacos with lettuce, tomato, avocado and sour cream
Evening Snack: oatmeal raisin cookie and a glass of milk

Maria

Breakfast: whole wheat English muffin with ricotta cheese with coffee
Snack: banana
Lunch: steak, Mexican brown rice, parmesan breaded zucchini
Snack: yogurt with berries
Snack: handful of nuts
Dinner: salmon, mashed potatoes, green beans

    I love this article! Gives me new meal and snack ideas as I continue to work on my moderation. I like seeing the PBJ-another RD/LD told me years ago that in pinch or a rush, this a great go-to meal.
